St. Patrick’s Day in the Time of COVID-19

Happy St. Patrick’s Day!

Can you believe this is the second time we’ve celebrated this holiday in the time of COVID-19?!? Of course, last year, we really didn’t know what we were in for yet, and this year, we’re all hoping that we can see a light at the end of the tunnel, but either way, our family celebration remained largely unchanged, although this year, we did start celebrating pretty early in the month with Shamrock Shakes (almost impossible to find in our area this year, so when we did pinpoint a location that was offering them, we jumped on it!) and a Green River Soda cheesecake from Eli’s:

We started the day with Lucky Charms and the leprechaun trap…spoilers, we didn’t catch him (again!)!

We read all of our favorite St. Patrick’s Day books, watched all of the Ireland episodes of Rick Steves’ Europe we have on disc, and also watched Aerial Ireland. I really enjoyed “Shamrock Day” in Animal Crossing: New Horizons. While it wasn’t a huge event like some, there were some special items, including what look suspiciously like Shamrock Shakes!

I also enjoyed giving a few of my favorite neighbors a Shamrock Suit to match mine:

The highlight of the day (for me at least) was dinner. I love corned beef and cabbage and all the trimmings!

And of course we had Guinness cake for dessert, which is a family favorite!

We had a nice St. Patrick’s Day, as we always do, but I really hope that next time the holiday rolls around, things in the world are a little more normal!

Tasty Tuesday–Cooking Through a Pandemic, the Third Month

Here we are, almost three months after everything started shutting down due to COVID-19. At this point, some places are starting to open back up, but not like they used to be, so things definitely aren’t back to normal. I’m especially feeling that lack of normal, as I’m still only going grocery shopping once every two weeks, and pretty much no where else, and that’s hard. But cooking is fun, and something normal I can do, so I’ve continued to do a lot of it. Here’s a look back at some of the meals we’ve been enjoying in the third month of lockdown life (including one amazing dinner from Beast Craft BBQ!):

We’ve kept up with our baking, too. Sunday afternoon “quarantine cookies” are definitely a thing! We’ve had fun trying all sorts of different combinations of baking chips, but the base recipe is always the same. I’ve also made some other things, including blueberry muffins, and even quite a few cakes…a carrot cake for our 19th wedding anniversary, a red ale strawberry cake for Pentecost, and a red velvet cake for Trinity Sunday.

I would be remiss if I didn’t mention two other special treats we’ve enjoyed in the last month, too. Eli’s Cheesecake kindly sent us an original favorites cheesecake sampler, which was a huge hit with everybody here, and I was blown away by the lovely gesture! We also indulged in another Chicago favorite, Frango mints…since we couldn’t go to Chicago, I had an extra little bit of Chicago sent to us!

I can’t say I care much for shopping every two weeks, and having to plan our meals so far ahead and in such great detail, but I do have a routine, so there is that. My refrigerator Tetris and pantry Jenga games have also reached a whole new level of expertise, so that’s fun. And we all enjoy having some extra-special meals to look forward to!

I don’t know if I’ll have another “Cooking Through a Pandemic” post next month…things will maybe be closer to our old normal by then, but who really knows? And even if they are, I think some things have changed for us permanently!

Tasty Tuesday–Cooking Through a Pandemic, the Second Month

So it’s been almost two full months since we got the call that Moose’s school was moving to distance learning. I figure that’s about the time our period of isolation began, even though it wasn’t fully official until a week or so later. Anyway, I’ve continued to do a lot of cooking, and I’ve continued to try to make some family favorites as well as some new things. Most of what I’ve made so far has been pretty popular (although the pork chops weren’t a huge hit), and we’ve repeated a few meals that were especially enjoyed (cheese and chorizo quesadillas are a new favorite!).

Baking has also been a favorite pastime…we bake cookies almost every Sunday afternoon. I also made a loaf of bread (not really from scratch, because I used frozen bread dough, but there was some effort!), plus a chocoflan for Cinco de Mayo, and a cake for Ladybug’s birthday.

New this month: We were actually able to support a few businesses, as well! We did carryout from two local favorites (The Wine Tap and Beast Craft BBQ), plus mail order from two others (Portillo’s and Eli’s Cheesecake). It was nice to have a small break from cooking on those occasions, because I’ve been going pretty much non-stop for the last two months!

I’m going grocery shopping on Thursday, and I have a whole new lineup of meals that I hope we’ll all enjoy!

Mother’s Day, Isolation Style

Like everything else lately, Mother’s Day this year looked a little bit different from our normal celebration. I still took a picture with the Fab Five, and I even wore my Mary Blair mother and child print dress from Pinup Girl Clothing, but we had to take the picture at home instead of at church…not being able to go to church was probably the biggest disappointment of the day for me!

In the end, dinner ended up being a lot more special than usual on Mother’s Day. We never go out, because I just don’t have the patience for it, and I often end up cooking…something that I enjoy, but usually something pretty simple. This year, I decided to splurge. Since we can’t go to Chicago in a few weeks as we had planned, and won’t be stopping for lunch at Portillo’s on the way home, I decided to bring Portillo’s to us, with their mail order service. I thought the price was very reasonable, especially given how much meat they included, it wasn’t hard to heat up, and I’m not kidding when I say it tasted almost as good as if we had been dining in the restaurant!

Dessert was another splurge…as long as we were already having a Chicago day with dinner and the movies we watched (Ferris Bueller’s Day Off, While You Were Sleeping, and Save the Last Dance, plus catching up on a few episodes of the Michael Jordan documentary, The Last Dance), I decided to order an Eli’s Cheesecake. It was also delicious, and again, almost as good as having it in Chicago!

These are strange times to be living, but I think we’ve been doing a good job of adapting and creating new special memories!

Tasty Tuesday–Chicago’s Best Foods

Of course, one of the best things about visiting any city is finding out what foods that location is famous for and trying them for yourself. Chicago is no exception, and foods that I grew up with as just food are now special treats when we travel. I’m sure people could argue all day about constitutes a Chicago food, but here are my favorites…Chicago-style pizza, Chicago-style hot dogs, Rainbow cones, gyros, Eli’s cheesecake, and Italian beef:

Ryan thinks I should have added the Italian combo to my list, but I really don’t like Italian sausage that much, so the best I can do is mention it. Also, not pictured, but extremely delicious and addictive…Chicago-style popcorn. I could eat that stuff by the (cheesy Christmas) tinful!

Markel Family Winter Weekend Getaway–Day Three

Last Saturday we woke up to the winter storm that had been forecasted…in the early part of the day, even the highways were covered, and from what we could see from our eighth floor hotel room, it was rough going out there. I was a little concerned that we would have to spend the entire day in our room…

We did have fun watching even more Food Network, and I went out to clear off the car at one point, but eventually I got kind of restless, so we walked over to the Oak Brook Home Show, which was being held next door at the Drury Lane Theatre. The show was kind of a bust (I hate high pressure environments), but I did enjoy seeing the inside of Drury Lane for the first time since I was a child. We were especially impressed by the beautiful chandeliers and ornate ceiling:

Back in our room, we noticed a bit of winter drama down below. One of the hotel snowplows had managed to get stuck in a snowbank, and we rather enjoyed watching as first they attempted to plow it out, then tried with shovels, and finally gave up and towed the thing out.

The snow did finally stop, and at some point I realized that the cars in the parking lot down below were no longer spinning their tires and the highways looked pretty clear. So we decided to venture out. First we stopped at Mariano’s, which is a new grocery store chain from when I lived in the Chicago area. We were very impressed with it, and decided we’ll probably need to go back in May, if only to sample the offerings from their “mochi bar.”

Then we went to church at St. John, Wheaton:

We even managed to stop back in at Frosty Faustings one more time, where we caught a bit of the cosplay contest and took a few more pictures.

Once we were back at the hotel, we dug into the treat we picked up at Mariano’s…an Eli’s Cheesecake sampler! We really enjoyed the specialty from “Mama’s Little Bakery, Chicago, Illinois!”

More Food Network, plus some Friends on Nick at Nite before bed on our last night in the hotel. We went to sleep wondering if there was going to be more snow overnight, but at least I parked in the theatre’s parking garage this time!
